Gluten-Free Spinach Pizza Crust

When my mother-in-law came to visit during the birth of my daughter, I was shocked to hear about the significant improvements to her health by following the Keto diet. She shared a few of her favorite recipes and one of them was this gluten-free spinach pizza crust. I would be lying if I said I was excited to try it; especially since I try to avoid fad diets and, although popular, Keto is just that — a fad diet.

The recipe sat in my inbox for a while. A long while. Finally, when I gained the motivation after having my baby to take my health back into my hands, I decided to give it a try and I’m so glad I did!

After making her recipe my own, I’m thrilled to be able to share it with you today! The result is a deliciously cheesy and satisfyingly healthy crust that holds up well to toppings! The best part — my kids even love it!

Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Prep a pizza stone or baking sheet with avocado oil.
  2. Place thawed spinach in a tea towel and wring water out completely.
  3. Add eggs, flour, cheese, salt, herbs, and spinach to the bowl of a food processor. Pulse until combined and chopped but not watery.
  4. Spread mixture onto baking surface, into a 10"-12" round, making a crust about 1/4"thick. Bake for 30 minutes.
  5. After 30 minutes, remove crust from oven, add desired toppings, and place back in the oven until toppings are heated through.
  6. Remove pizza from the oven, let cool for about five minutes, then slice and enjoy!

*Feel free to swap out this flour for your favorite. Other great options are almond flour, chickpea flour, and coconut flour.
