Chicken and Lentil Soup

  1. Heat olive oil in pan over medium-high heat.
  2. Sautee carrots, celery, and onion for five minutes, until they begin to sweat.
  3. Add garlic and sautee for another two minutes.
  4. Add chicken, herbs, salt, and pepper. Sautee for 2-3 minutes or enough to begin to brown the chicken.
  5. Add stock and juice from 1/2 lemon.
  6. Once boiling, add lentils, cover, and reduce heat to low. Simmer for one hour.
  7. Just before serving, remove the bay leaf and add juice of remaining 1/2 lemon.
  8. Pair with your favorite sourdough bread and enjoy!
