Easy Chicken and Lentil Soup

You know those cold and cloudy days where you want nothing more than a hot, steaming bowl of your favorite chicken noodle soup; but you don’t have all day to let it simmer? This is exactly where I was when I came up with my super easy chicken and lentil soup recipe.

This recipe is packed full of vegetables, fiber, and all clean ingredients — and it is absolutely delicious! This was the first time I had ever cooked with lentils and I must say, this soup is absolutely delicious. The freshness from the added lemon gives it just enough acidity to brighten up the whole dish. When paired with your favorite gluten-free or sourdough bread, it is sure to be a hit in your home!

To make this soup, I simply diced one red onion, four carrots, and three ribs of celery and added them to my stock pot with hot olive oil. After sauteeing for about five minutes, garlic was added and I let the flavors encorporate for two minutes. I then added in my chicken, herbs, and seasonings.

The chicken should begin to brown before adding your stock. Once the soup began to boil, I added the lentils and reduced the heat to low, put the lid on, and let it simmer for one hour. Just before serving, add the juice from the remaining half of your lemon. Voila! There you have it; my super easy and extremely delicious chicken and lentil soup recipe!

Instructions
  1. Heat olive oil in pan over medium-high heat.
  2. Sautee carrots, celery, and onion for five minutes, until they begin to sweat.
  3. Add garlic and sautee for another two minutes.
  4. Add chicken, herbs, salt, and pepper. Sautee for 2-3 minutes or enough to begin to brown the chicken.
  5. Add stock and juice from 1/2 lemon.
  6. Once boiling, add lentils, cover, and reduce heat to low. Simmer for one hour.
  7. Just before serving, remove the bay leaf and add juice of remaining 1/2 lemon.
  8. Pair with your favorite sourdough bread and enjoy!
